Aroma
Warm, unctuous nose. Perceptible from the first nose, sherry notes (rancio, fig, licorice) are supported by a particularly fine woodiness. Noble spices (saffron, cumin) and candied fruit (peach, apricot) reinforce its warm character. It evolves on heady flowers (honeysuckle, iris) and eucalyptus.
Taste
Lively and firm on the palate. Exotic (pineapple, mango), it is also spicy and salty. In the mid-palate, vanilla-bourbon and ripe fruit (mirabelle plum, pear) give it brighter hues. Notes of citrus (lemon, grapefruit) and mushroom add golden-brown nuances. The finish is long and supple. It follows the cycle of the seasons. First winter (vanilla ice cream), then spring (trees in bloom), then summer (radiant and spicy) and finally autumn (dead leaves, chestnut). The empty glass reveals milk chocolate and dried fruit (almonds, cashews).
