Aroma
Balanced, deep nose. Phenolic, peaty and smoky, the first nose also reveals chocolate. It evolves on candied fruit (lemon, grapefruit) and iodized, camphorated notes. Marked by sea spray and smoked fish, it increasingly asserts its island temperament. Roasting aromas (roasted coffee, tobacco) come to the fore.
Taste
Firm, lively palate. The attack is initially spicy (gray pepper, clove) before smoke and ash impose their flavors. Finely liquoriced, the mid-palate becomes increasingly earthy and saline. Mineral (chalk), it returns to fresh fruit (pear, apple) and citrus (lemon). The finish is lactic (agave) and floral (lily, iris). Long, ashy finish. Freshly cut grass and spearmint testify to its herbaceous character. Then gentian and ginger root inscribe it deep in Islay soil. The aftertaste is divided between peat, smoke and white fruit. The empty glass is empyreumatic (bitumen, eucalyptus).
